The old joke, “There are four food groups in San Antonio, Beer, Tequila, Tacos and BBQ.” Too true, really. And smoking the good stuff? Bobby G’s BBQ. Wandered in and joked with the woman behind the counter. She allowed as how she was a customer first, liked it so much, she started working there.

Ordered up a Two-Meat Tuesday platter, pork ribs, brisket, slaw, salad.

Ambiance gets high ranking, a couple of badges and pistols — local law enforcement officers — a good sign. Sass from the counter, positive symbol. Big Red signage abounded, another good sign, and then?

The first disconnect. There was a row of “Siracchi” bottles, the emblematic rooster hot sauce? Maybe a half dozen of those in a row, next to the requisite white bread. Sriracha? Seriously? Deep on the Southside? 2203 Nogalitos?

Who cares? Minor incongruity and I’m sure subsequent inquires will reveal the why. First trip, the brisket was not anything special. Slaw, salad, all within the realm of normal to very good, think of the “extra fine” grade, but the pork ribs?

Amazing.

Perhaps better than anything else I’ve had in a long, long time, with a special, currently un-identified, aromatic spice as the extra kicker. Just amazing.

Pork ribs are difficult to do “right,” and that first trip, that first taste? More than right.. Better than anything before.
