I couldn’t help but observe that the bacon tastes different because it’s fresh frozen, not cured. Tastes like uncured pork belly. Which is what bacon really starts out like.
Grocery store stuff is “cured,” which gives the bacon its bacon flavor. Salted, smoke flavor added, all the good bits, from whence it derives the special “bacon flavor.” Sugar, usually lots of sugar.
